Ingredients

  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon pure almond extract
  • 1 cup strong brewed coffee, cooled
  • 1 tablespoon cherry liqueur (optional)
  • 24 ladyfingers (savoiardi)
  • 1 cup fresh or frozen cherries, pitted and halved
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. In a shallow bowl, mix the cooled coffee and cherry liqueur (if using). Set aside.
  2. In a large bowl, combine the mascarpone cheese and powdered sugar. Using a whisk or electric mixer, beat until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate it.
  4. Stir in the almond extract until well combined.
  5. Quickly dip each ladyfinger into the coffee mixture, ensuring they’re soaked but not soggy. Lay them in a single layer at the bottom of your dish.
  6. Spoon half of the mascarpone mixture over the layer of soaked ladyfingers, smoothing it evenly.
  7. Sprinkle half of the pitted and halved cherries over the cream layer.
  8. Repeat by soaking more ladyfingers, layering them over the cherries, followed by the remaining mascarpone mixture and the rest of the cherries on top.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  10. Just before serving, dust the top with cocoa powder or sprinkle chocolate shavings for that extra touch.

Notes

For a more visually appealing dessert, try to alternate the layers of cherries and cream evenly. If you have leftovers, store them in the fridge with plastic wrap on top.
