- 8 ounces mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon pure almond extract
- 1 cup strong brewed coffee, cooled
- 1 tablespoon cherry liqueur (optional)
- 24 ladyfingers (savoiardi)
- 1 cup fresh or frozen cherries, pitted and halved
- Chocolate shavings or cocoa powder for garnish
Instructions
- In a shallow bowl, mix the cooled coffee and cherry liqueur (if using). Set aside.
- In a large bowl, combine the mascarpone cheese and powdered sugar. Using a whisk or electric mixer, beat until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate it.
- Stir in the almond extract until well combined.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they’re soaked but not soggy. Lay them in a single layer at the bottom of your dish.
- Spoon half of the mascarpone mixture over the layer of soaked ladyfingers, smoothing it evenly.
- Sprinkle half of the pitted and halved cherries over the cream layer.
- Repeat by soaking more ladyfingers, layering them over the cherries, followed by the remaining mascarpone mixture and the rest of the cherries on top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
- Just before serving, dust the top with cocoa powder or sprinkle chocolate shavings for that extra touch.
Notes
For a more visually appealing dessert, try to alternate the layers of cherries and cream evenly. If you have leftovers, store them in the fridge with plastic wrap on top.
