  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 12 tablespoons milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. In another bowl, combine the oats, flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chopped pecans gently with a spatula until evenly distributed.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Once baked, remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a cooling rack.
  9. While the cookies cool, make the maple icing. In a bowl, whisk together the powdered sugar, maple syrup, and milk until smooth.
  10. Once the cookies are completely cool, drizzle the maple icing over the top of each cookie and let them sit for a few minutes to allow the icing to set.

Notes

For a little extra flair, sprinkle some coarse salt on top of the icing before it sets.
