- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups old-fashioned oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1 cup powdered sugar
- 2 tablespoons pure maple syrup
- 1–2 tablespoons milk (or dairy-free alternative)
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
- In another bowl, combine the oats, flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chopped pecans gently with a spatula until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Once baked, remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a cooling rack.
- While the cookies cool, make the maple icing. In a bowl, whisk together the powdered sugar, maple syrup, and milk until smooth.
- Once the cookies are completely cool, drizzle the maple icing over the top of each cookie and let them sit for a few minutes to allow the icing to set.
Notes
For a little extra flair, sprinkle some coarse salt on top of the icing before it sets.
