  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed coffee, cooled
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your 8×8 inch baking pan with parchment paper, leaving some overhang.
  3. In a mixing bowl, whisk together the melted butter and granulated sugar until well combined.
  4. Add the eggs, one at a time, mixing until fully incorporated. Stir in the vanilla extract.
  5. Sift in the cocoa powder, flour, salt, and baking powder. Gently fold until just combined.
  6. In another bowl, beat the softened cream cheese and sugar together until smooth.
  7. Add in the egg, vanilla extract, brewed coffee, and cocoa powder. Mix until creamy.
  8. Pour half of the brownie batter into the prepared pan, spreading it evenly.
  9. Dollop half of the cheesecake mixture on top and swirl gently with a knife.
  10. Pour the remaining brownie batter over the cheesecake layer, followed by the remaining cheesecake mixture.
  11. Swirl gently with a knife to create a marbled effect.
  12. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  13. Allow the brownies to cool in the pan for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely before slicing.
