- 6 large eggs, boiled and peeled
- 1/4 cup mayonnaise
- 2 tablespoons buffalo sauce
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices of cooked bacon, crumbled
- Fresh chives or green onions, chopped for garnish
Instructions
- Place the eggs in a medium saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12-14 minutes, then transfer them to an ice bath for 5 minutes to cool.
- Once the eggs are cooled, peel them and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside.
- Using a fork or potato masher, mash the yolks until they are fine and crumbly. Add the mayonnaise, buffalo sauce, Dijon mustard, garlic powder, salt, and pepper. Mix until everything is well combined and creamy.
- Stir in the crumbled bacon, reserving a little for garnish. Taste the filling and adjust seasoning if necessary.
- Spoon or pipe the yolk mixture back into the egg white halves. Don’t be shy—fill them generously!
- Top each deviled egg with the reserved bacon and a sprinkle of chopped chives or green onions for a fresh touch.
- Place the filled eggs in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve them cold.
Notes
For easy peeling, use eggs that are at least a week old. Adding a splash of vinegar to the boiling water can also help.
