Ingredients
- 1 lb ground beef
- 1 cup cooked long-grain white rice (or brown rice)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)
- 1/2 cup milk
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp dried thyme (optional)
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese (optional)
- 1/2 cup chopped bell peppers (optional)
- 1/2 cup sliced mushrooms (optional)
- Dash of hot sauce (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until no longer pink (5-7 minutes). Drain excess fat.
- Add chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until onion is soft.
- Stir in frozen mixed vegetables and any optional add-ins (bell peppers, mushrooms). Cook for 2 minutes.
- In a medium bowl, whisk together condensed soup, milk, salt, pepper, paprika, and thyme until smooth.
- Add cooked rice to the skillet and mix until evenly combined. Pour in the soup mixture and stir until creamy and well blended.
- Transfer mixture to a 9×13-inch casserole dish, spreading evenly.
- Sprinkle cheddar, mozzarella, and parmesan cheeses evenly over the top.
- Bake for 20 minutes, or until cheese is melted, bubbly, and lightly golden. For extra crispy cheese, bake 5 minutes longer.
- Let casserole rest for 5 minutes before serving.
Notes
Use day-old rice for best texture. Grate your own cheese for smoother melting. Add a splash of milk if mixture looks dry before baking. Cover with foil if cheese browns too quickly. For gluten-free, use gluten-free condensed soup. For dairy-free, substitute plant-based milk and cheese.
