Description

This churro stuffed French toast casserole is a delightful breakfast dish that combines soft, custardy bread with a sweet, creamy filling and a crispy churro topping. Perfect for special occasions or cozy weekend mornings!

Ingredients

Scale
  • 1 loaf of challah or brioche bread, cut into cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the Bread: Start by cutting the challah or brioche bread into 1-inch cubes and set aside.
  2. Make the Custard: In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  3. Layer the Bread: In the prepared baking dish, layer half of the bread cubes evenly. Pour half of the custard mixture over the bread and let it soak for about 10 minutes.
  4. Prepare the Churro Filling: In another bowl, mix the softened cream cheese, powdered sugar, and cinnamon until smooth. Spread this mixture over the soaked bread layer.
  5. Add More Bread: Layer the remaining bread cubes on top of the cream cheese filling, then pour the rest of the custard mixture over everything. Press down gently to ensure the bread is soaking up the custard.
  6. Chill: Cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight if you want to prep ahead.
  7. Preheat the Oven: When you’re ready to bake, preheat your oven to 350°F (175°C).
  8. Bake: Remove the plastic wrap and bake the casserole for 45-55 minutes, or until it’s puffed and golden brown on top.
  9. Make the Topping: In a small bowl, combine the melted butter, granulated sugar, and cinnamon. Brush this mixture over the top of the baked casserole right when it comes out of the oven.
  10. Serve: Let it cool for a few minutes, then slice and serve warm. Enjoy!

Notes

Feel free to swap in different bread types or adjust the fillings based on your preferences. A good cream cheese or artisan bread makes all the difference!
