  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled and diced
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix!
  6. Using a cookie scoop or spoon, drop dollops of the batter onto the prepared baking sheets, leaving space between each.
  7. Bake in the preheated oven for 10-12 minutes or until the cookies are set and lightly golden. Let them cool on the sheets for about 5 minutes, then transfer to a cooling rack.
  8. While the cookies are cooling, prepare the apple filling. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the diced apples.
  9. Once the cookies are completely cool, spread a generous amount of the apple filling on the flat side of one cookie. Top it with another cookie to create a sandwich.
  10. Drizzle caramel sauce over the assembled whoopie pies for that extra touch of sweetness!
  11. Serve immediately or store in an airtight container in the fridge for up to 3 days.
