- 1 cup apples, peeled and diced
- 1 cup cream cheese, softened

- ½ cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix!
- Using a cookie scoop or spoon, drop dollops of the batter onto the prepared baking sheets, leaving space between each.
- Bake in the preheated oven for 10-12 minutes or until the cookies are set and lightly golden. Let them cool on the sheets for about 5 minutes, then transfer to a cooling rack.
- While the cookies are cooling, prepare the apple filling. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the diced apples.
- Once the cookies are completely cool, spread a generous amount of the apple filling on the flat side of one cookie. Top it with another cookie to create a sandwich.
- Drizzle caramel sauce over the assembled whoopie pies for that extra touch of sweetness!
- Serve immediately or store in an airtight container in the fridge for up to 3 days.
