  • 1 tablespoon lemon juice
  • 1/4 cup brown sugar
  • 1/2 cup all-purpose flour (for coating)
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well blended.
  2. In a separate medium bowl, mix the eggs, milk, melted butter, and vanilla extract. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. It’s okay if there are still a few lumps; don’t overmix!
  4. In another bowl, toss the diced peaches with lemon juice, cinnamon, nutmeg (if using), and brown sugar. Let sit for about 5 minutes to release their juices.
  5. Carefully fold the coated peaches into the waffle batter, being cautious not to break them apart too much.
  6. Preheat your waffle maker according to the manufacturer’s instructions. Lightly grease it with butter or cooking spray.
  7. Pour the batter onto the preheated waffle maker, using enough to cover the surface (usually about 1/2 to 3/4 cup, depending on your machine). Close the lid and cook according to your waffle maker’s instructions (typically 4-5 minutes).
  8. While the waffles are cooking, mix the granulated sugar and cinnamon in a small bowl for the topping.
