  • Author: Ananya Patel
  • Total Time: 45-50 minutes
  • Yield: 6 servings 1x

Description

This cottage cheese egg bake is a high-protein, customizable breakfast casserole that’s perfect for busy mornings. Fluffy eggs and creamy cottage cheese combine with veggies and cheese for a satisfying, meal-prep-friendly dish.

Ingredients

Scale
  • 6 large eggs, room temperature
  • 1 cup cottage cheese (small-curd recommended)
  • 1/2 cup milk (whole, skim, or unsweetened almond milk)
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • 1 cup diced vegetables (bell peppers, spinach, broccoli florets)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup diced cooked bacon or sausage
  • Optional: 2 tablespoons chopped fresh herbs (parsley or chives)
  • Optional: Pinch of red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with nonstick spray or butter.
  2. Blend cottage cheese in a blender for 10-15 seconds for a creamy texture (optional).
  3. Crack eggs into a mixing bowl and whisk until fully combined and slightly frothy.
  4. Add blended cottage cheese and milk to eggs; whisk until well combined.
  5. Fold in shredded cheese and diced vegetables. Add cooked bacon or sausage if using.
  6. Season with salt, black pepper, and optional herbs or red pepper flakes. Stir gently.
  7. Pour mixture into prepared baking dish and spread evenly.
  8. Bake for 35-40 minutes, checking at 35 minutes. Bake until center is set and edges are golden.
  9. Remove from oven and let cool for 5-10 minutes before slicing.
  10. Slice into squares and serve warm. For meal prep, cool completely and refrigerate.

Notes

Blend cottage cheese for a soufflé-like texture. Drain watery veggies before adding. Don’t overmix after adding cheese and veggies. Rest bake for 5-10 minutes before slicing. Assemble the night before for easy mornings. Double the recipe for a crowd or use muffin tins for single servings (reduce bake time to 18-20 minutes).
