Description
This creamy coconut mango pudding parfait is like a tropical vacation in your mouth! With layers of velvety coconut pudding, sweet ripe mango, and a sprinkle of crunchy granola, it’s both a feast for the eyes and the taste buds.
Ingredients

- 2 cans (400ml each) full-fat coconut milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup cornstarch
- A pinch of salt
- 2 ripe mangoes, diced into small pieces
- 1 cup granola
- Chopped mint (optional, for garnish)
Instructions
- In a medium saucepan, combine coconut milk, sugar, cornstarch, and salt. Whisk until smooth.
- Place the saucepan over medium heat. Continuously whisk until the mixture thickens and begins to bubble, about 5-7 minutes.
- Once thickened, remove from heat and stir in the vanilla extract. Allow the pudding to cool slightly.
- In serving glasses, add a layer of coconut pudding at the bottom.
- Follow with a layer of diced mango, then a sprinkle of granola.
- Continue layering until glasses are filled, finishing with a layer of pudding on top.
- Cover the parfaits with plastic wrap and chill in the refrigerator for at least 1 hour before serving.
- Just before serving, add a sprinkle of granola and chopped mint on top for a fresh touch!
Notes
Watch the pudding closely while it cooks. If it thickens too much, you can always add a splash of coconut milk to loosen it up. Store leftovers in the refrigerator for up to 3 days.
