These caramel apple cider cheesecake bars combine creamy cheesecake with the rich flavors of caramel and apple cider, making them a perfect autumn treat. They’re easy to make and sure to impress your guests!

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup caramel sauce
Instructions
- Preheat your oven to 325°F (160°C). Line your baking pan with parchment paper or grease it well with butter.
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove and let cool slightly.
- In another mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs, one at a time, mixing well after each addition.
- Pour in the apple cider, vanilla extract, cinnamon, and nutmeg. Mix until everything is combined and smooth.
- Pour the cheesecake filling over the cooled crust and spread it evenly with a spatula.
- Bake in the preheated oven for 30-35 minutes. The cheesecake should be set but still have a slight jiggle in the center.
- Once done, turn off the oven and crack the door open, letting the cheesecake cool slowly for about 1 hour.
- After it cools, transfer it to the fridge and chill for at least 4 hours, or overnight for best results.
- Once chilled, drizzle the caramel sauce over the top before slicing into squares.
Notes
For a gluten-free option, use gluten-free graham crackers. For a vegan option, substitute dairy-free cream cheese.
