- 2 pounds ground beef, browned and drained
- 2 pounds potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted butter, melted
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Drain any excess grease and set aside.
- Chop the onion and mince the garlic. Set them aside for later.
- In your slow cooker, layer the diced potatoes, chopped onion, and minced garlic at the bottom.
- Spoon the cooked ground beef over the potato mixture, ensuring it’s evenly distributed.
- In a bowl, combine the beef broth, Worcestershire sauce, salt, and pepper. Pour this mixture over the beef and potatoes.
- In a small bowl, melt the unsalted butter and then drizzle half of it over the casserole. Save the rest for later!
- Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours. The potatoes should be fork-tender by the end of cooking.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top. Drizzle the remaining garlic butter over the cheese.
- Once cooked, garnish with freshly chopped parsley, scoop into bowls, and enjoy!
Notes
Feel free to mix in your favorite vegetables, like bell peppers or corn, for an extra twist! You can also substitute the ground beef with ground turkey or chicken.
