Description
This refreshing strawberry coconut mocktail combines sweet, ripe strawberries with creamy coconut, served over ice with a splash of sparkling water. It’s perfect for summer gatherings and is a hit with both kids and adults.

- 2 cups fresh strawberries, hulled and sliced
- 1 cup coconut cream
- 1–2 cups sparkling water
- 2 tablespoons fresh lime juice
- Ice cubes, as needed
- Mint leaves, for garnish
Instructions
- Hull and slice about 2 cups of fresh strawberries. Reserve a few slices for garnish if desired.
- In a blender, add the sliced strawberries, 1 cup of coconut cream, and 2 tablespoons of fresh lime juice. Blend until smooth, about 30 seconds.
- Taste the mixture. If you want it sweeter, add a touch of honey or agave syrup and blend again until combined.
- In serving glasses, add ice cubes to fill about halfway. Pour the strawberry coconut mixture over the ice.
- Top off each glass with sparkling water. Stir gently to combine. Garnish with mint leaves and extra strawberry slices if desired. Serve immediately.
Notes
Use ripe strawberries for the best flavor. Chill your coconut cream and sparkling water for an extra refreshing drink.
