Description
This Strawberry Shortcake Cinnamon Roll Casserole is a delightful breakfast dish that combines the flavors of cinnamon rolls and fresh strawberries, making it perfect for lazy weekends or special brunch gatherings.
Ingredients
Scale
- 2 cans of refrigerated cinnamon rolls, 12 oz each (don’t forget the icing)
- 2 cups fresh strawberries, hulled and sliced
- 4 large eggs
- 1 cup milk (whole or 2%, for creaminess)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/2 cup whipped cream (optional, for serving)
- Fresh strawberries, for garnish
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Open the cans of cinnamon rolls and separate them. Cut each roll into quarters and place them into a greased 9×13 inch baking dish.
- Evenly distribute the sliced strawberries over the cinnamon rolls.
- In a mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar until well combined.
- Pour the egg mixture evenly over the cinnamon rolls and strawberries.
- Let the casserole sit for about 10 minutes so the cinnamon rolls can absorb some of the custard.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until golden brown and set in the middle.
- While the casserole is baking, prepare the icing that comes with the cinnamon rolls according to the package instructions.
- Once baked, let it cool for a few minutes. Drizzle the icing over the top, and if desired, top with whipped cream, fresh strawberries, and a dusting of powdered sugar before serving.
Notes
Letting the cinnamon rolls soak in the custard mixture is crucial for flavor and texture. Monitor the baking time as every oven is different.
