These Easy Cheddar and Chive Puff Pastry Bites are golden, flaky pastries filled with gooey cheddar cheese and fresh chives, making them a delightful snack for any occasion.

- 1 sheet puff pastry, thawed
- 1 cup cheddar cheese, shredded
- ¼ cup chives, finely chopped
- 1 large egg
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper to prevent sticking.
- Lightly flour your surface. Roll out the puff pastry to about ¼ inch thick. Cut it into 2-inch squares (you should get about 12 squares).
- In a mixing bowl, combine the shredded cheddar cheese, chopped chives, salt, and pepper. Mix well until everything is evenly distributed.
- Place about a tablespoon of the cheese mixture in the center of each pastry square. Fold the corners up to meet in the center and pinch to seal. Place them seam-side down on the prepared baking sheet.
- Beat the egg in a small bowl. Brush the tops of each bite with the egg wash to give them that beautiful golden color when baked.
- Bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.
- Let them cool slightly before serving.
Notes
Keep the dough cold for best results and don’t overfill the pastries.
