- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda

- 1 cup (150g) fresh blueberries (or frozen, if needed)
- Sea salt flakes (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the fresh blueberries, ensuring they’re evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Before baking, sprinkle a small pinch of sea salt flakes on top of each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers are still soft.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a cooling rack to cool completely.
