  • Sea salt flakes (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. Gently fold in the fresh blueberries, ensuring they’re evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Before baking, sprinkle a small pinch of sea salt flakes on top of each cookie.
