Description

These No-Bake Strawberry Shortcake Cheesecake Bars are a delightful dessert featuring creamy cheesecake layered with fresh strawberries on a buttery graham cracker crust. Perfect for warm days when you want something sweet without baking!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (or digestive biscuits)
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 16 oz (450 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (optional, depending on sweetness of strawberries)
  • 1 tablespoon lemon juice

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture firmly into the bottom of your lined baking pan. Chill in the refrigerator while you prepare the filling.
  2. In a large bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix well.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Pour the cheesecake filling over the prepared crust and smooth out the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to allow it to set.
  5. In a medium bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for about 10 minutes to release their juices.
  6. Once the cheesecake has set, remove it from the refrigerator. Top with the marinated strawberries, spreading them evenly across the surface.
  7. Use a sharp knife to cut the cheesecake into bars. Serve chilled and enjoy!

Notes

For a gluten-free option, use gluten-free graham crackers. Allow the cheesecake to chill for at least 4 hours for best results.
