- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (or heavy cream, whipped)
- 1 cup chopped peanut butter cups (plus more for topping)
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
- Firmly press the mixture into the bottom of your prepared baking dish. Chill in the refrigerator for about 10-15 minutes to set.
- In a large mixing bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.
- Gradually add the powdered sugar and vanilla, mixing until fully combined.
- Gently fold in the whipped topping until no streaks remain.
- Fold in the chopped peanut butter cups, reserving a few for the topping.
- Pour the cheesecake filling over the chilled crust and spread evenly.
- Refrigerate the bars for at least 4 hours or overnight if possible.
- When ready to serve, heat the heavy cream in a microwave-safe bowl until hot. Add the chocolate chips and let sit for 2-3 minutes, then stir until smooth.
- Drizzle the chocolate ganache over the cheesecake layer and sprinkle additional chopped peanut butter cups on top.
- Once the ganache has set slightly, slice the bars into squares and enjoy!
