  • 1 cup beef broth (or stock)
  • 1/2 cup unsalted butter, melted
  • 8 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste

Instructions

  1. Start by trimming excess fat from the beef chuck roast, then season generously with salt and pepper.
  2. In a mixing bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, soy sauce, thyme, and rosemary.
  3. Place the beef in the crockpot and pour the garlic butter sauce over it, ensuring the beef is well-coated.
  4. Pour the beef broth around the sides of the roast (not directly on top), so it doesn’t wash off the seasoning.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is fork-tender.
  6. About an hour before the beef is done, preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, parsley, salt, and pepper.
  7. Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes or until golden brown and crispy.
  8. Once the beef is done, shred it with two forks right in the crockpot. Serve warm with the herb roasted potatoes on the side.

Notes

Use low-sodium beef broth for better control over saltiness. Fresh herbs enhance flavor.
