- 3–4 lbs beef chuck roast, trimmed
- 1 cup beef broth (or stock)
- 1/2 cup unsalted butter, melted
- 8 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- Salt and pepper, to taste
Instructions
- Start by trimming excess fat from the beef chuck roast, then season generously with salt and pepper.
- In a mixing bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, soy sauce, thyme, and rosemary.
- Place the beef in the crockpot and pour the garlic butter sauce over it, ensuring the beef is well-coated.
- Pour the beef broth around the sides of the roast (not directly on top), so it doesn’t wash off the seasoning.
- Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is fork-tender.
- About an hour before the beef is done, preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, parsley, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes or until golden brown and crispy.
- Once the beef is done, shred it with two forks right in the crockpot. Serve warm with the herb roasted potatoes on the side.
Notes
Use low-sodium beef broth for better control over saltiness. Fresh herbs enhance flavor.
