Description
These no-bake mini cheesecakes combine the creaminess of cheesecake with the delightful crunch of Snickers bars, making them an irresistible treat for any occasion.
Ingredients
Scale
- 1 cup graham cracker crumbs (finely crushed)
- 1/4 cup unsalted butter (melted)
- 2 tablespoons sugar (optional)
- 16 oz cream cheese (softened to room temperature)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (chilled)
- 1 cup mini Snickers bars (chopped)
- 1/2 cup caramel sauce
- 1/4 cup chopped peanuts (for garnish)
- Extra mini Snickers (cut into small pieces for garnish)
Instructions
- In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar (if using). Mix until it’s well combined and resembles wet sand.
- If using a springform pan, press the mixture evenly into the bottom of the pan. If using a muffin tin, press the mixture into the bottom of each liner. Use the back of a measuring cup to pack it down firmly. Chill in the refrigerator for about 15 minutes.
- In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
- In another bowl, whip the chilled heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Fold in the chopped mini Snickers bars, making sure they’re evenly distributed throughout the filling.
- Spoon the cheesecake filling over the prepared crust in the pan or muffin tin. Smooth the top with a spatula.
- Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results, until the cheesecakes are set.
- Once set, remove the cheesecakes from the refrigerator. Drizzle with caramel sauce and sprinkle chopped peanuts and extra mini Snickers pieces on top.
- If using a springform pan, carefully remove the sides. For muffin tins, simply peel away the liners. Serve chilled and watch them disappear!
Notes
Make sure your cream cheese is at room temperature before mixing to avoid lumps.
